Raw Pecan Salad

 


Ingredients:

3/4 cup pecans (1/2 cup whole and 1/4 cup chopped)
1/4 head cabbage, sliced thin
1/2 bunch parsley, chopped
1/2 bunch green onions, sliced

Dressing:

3/4 cup sun-dried tomatoes, soaked in warm water for 1 hour then drained
6 Tbs. olive oil
1/4 cup apple cider vinegar
1 clove garlic, chopped
1 tsp. ground fennel
1/2 tsp. ground black pepper
1/2 to 1 tsp. salt

When tomatoes are soft, place in a small blender with the other dressing ingredients. Blend thoroughly, then pour over the pecans and mix well. Place the prepped veggies in a  large bowl then pour the pecan and dressing mixture over the veggies and mix well. Done and Yum!

Hi Nicole! Thanks for this site, I know you posted a workout dvd on your other site but this site is so much more pretty to look at with all these glorious recipes!

I used to do what I call raw taco meat...it was sundrieds, cayenne, EVOO, soaked almonds, chili powder...blend to chunky texture. Really good and this kinda reminds me of it. But I hate to say, i really dont digest raw nuts that well, even soaked and all that, they just kinda sit there and so I dont do too many nut pates anymore. Kale chips, well those are a hit of course :)

Youll have to let me know if all these nuts work for you, well they obvi do b/c otherwise you wouldnt make this stuff LOL but yeah I have to be careful.

It's raining and nasty here, oh how I want to go home :)
